Ingredients:

  • 2 large eggs
  • 1 1/2 cups of non-fat milk
  • 1 Tbsp. of sugar
  • 3 Tbsp. of oil
  • 2 bananas, mashed
  • 3/4 cup of whole wheat flour
  • 3/4 cup of white flour
  • 2 tsp. of baking powder

Preparation:

  • Preheat griddle to 350 degrees F.
  • In medium-size bowl, beat eggs, add in milk, sugar, oil and bananas. Mix well.
  • Add flour and baking powder. Mix gently.
  • Spray griddle with no-stick cooking spray. Spoon 1/4 cup of batter onto griddle for each pancake.
  • Cook until tops are bubbly and pancakes are dry around the
    edges. Flip and cook until golden brown (about 2-3 min). Serve immediately.

Tip:

  • Top pancakes with warm applesauce or yogurt.
