Ingredients:

  • 1 cup of frozen (or canned) corn, drained
  • 1 cup of cooked (or canned) black beans, drained
  • 2 Tbsp. of diced green or red peppers, chopped
  • 2 Tbsp. of cilantro leaves, chopped
  • 1 Tbsp. of cider vinegar
  • 1 tsp. of vegetable oil

Preparation:

  • Mix all ingredients together in a medium sized bowl.
  • Enjoy! Refrigerate leftovers.
