Ingredients:
- 1 cup of frozen (or canned) corn, drained
- 1 cup of cooked (or canned) black beans, drained
- 2 Tbsp. of diced green or red peppers, chopped
- 2 Tbsp. of cilantro leaves, chopped
- 1 Tbsp. of cider vinegar
- 1 tsp. of vegetable oil
Preparation:
- Mix all ingredients together in a medium sized bowl.
- Enjoy! Refrigerate leftovers.
